Posh veggie pasta bake

I've decided that lasagnes are quite a faff to make and pretty tricky to serve up too! Does anyone have a veggie pasta bake recipe that is delicious and easy but good enough for company?

Does it have to be a pasta bake? Loads of really lovely garlicky tomato and courgette type linguine recipes around.

Spaghetti alla Nerano is a good place to start but it's still a bit 'faffy' with the frying of the courgettes

Personally I love a very simple recipe which is roasting good quality cherry tomatoes (the good expensive ones not cheap ones) in a lot of olive oil, a couple of garlic cloves, Italian herbs, salt and a pinch of chilli. When the tomatoes and garlic are roasted mash it alt together into an oily paste and stir through spaghetti/linguine and tonnes of vegetarian hard cheese on top. Black pepper and a sprinkling of fresh basil. Incredibly simple but probably my death bed meal.

The butternut and sage goes really well with gnocchi as well.

I've also been cooked an amazing mushroom and white wine pasta by a uni friend that I've never been able to replicate

No idea if this is posh but I make it often.

Chop up the veg of your choice what you’ve got in the bottom of the fridge. Onion, mushroom, courgette, squash, peppers, cherry tomatoes, garlic etc. Put in a dish and roast. Then stir in some tomato puree and any herbs you fancy. Pop back in the oven (or air fryer) for a couple of minutes. Then add some orzo, put back in for a few minutes. Then add enough stock to just about cover everything, don’t worry if it looks wet. Put slices of mozzarella on the top. Put back in the oven for twenty minutes or so. Done.
