I've returned from 3 days away and just picked this lot! I already have blanched beans in the freezer from last week and only so much space left.

Please send me your recipe/storage ideas because there is only so much I can give to neighbours and friends.

The two together would make a nice curry. Chop the beans small and parboil so they're not tough.

And you could do a version of nicoise salad.

Greek bean and tomato stew: fasolakia*

Sweat onions in plenty of olive oil, add garlic, add roughly sliced beans and tomatoes (I would normally use tinned tomatoes, but since you're trying to get rid of fresh tomatoes I'd use half and half), add lashings of paprika, a glug of red wine and water if needed, simmer for about 40 minutes or until beans are really tender. Freezes well.

*they wouldn't use runner beans in Greece but it still works

Bruschetta: lightly toast a big slice of sourdough bread or similar (preferably on a griddle), drizzle with olive oil, heap with finely chopped tomatoes. Eat.

I make Turkish Taze Fasulye - very similar to the the Greek dish, but it's meant to be made with runner beans.
Remove some from the pan before it's completely cooked & freeze in portions.

I’d turn it in to chutney

Make caponata with the tomatoes.
or
Beans a la Greque
Cook the tomatoes with olive oil, onions and garlic, when cooked to a soft sauce consistency, cook the beans. Add the drained cooked beans to the tomato sauce and combine well.

This can be served immediately as a vegetable with lamb or pork chops or baked ham, or served cold as a salad. You can also add chickpeas or cooked new potatoes to make a more substantial dish for lunch.
