Freekeh ?

Just bought a bag to try, but all the recipes I've found are for salads.
I thought it would be a substitute for rice in a hot meal, such as paella, gumbo, or with a curry etc.
Any ideas, please?

We use it in chorba a North African

lamb and vegetable soup eaten in Ramadan.

Yes Ive used it as a substitute for rice, I have a bag in the cupboard, it takes a bit longer to cook and a bit more liquid. Much more dense. More protein in it which attracted me and more nutty tasting.

Yes you can absolutely use it instead of rice. We’ve had a few freekeh recipes with Hello Fresh. This was my favourite https://www.hellofresh.co.uk/recipes/freekeh-risotto-590235d5171c582c4e658622 They also did a good pilaf recipe

Did you follow the timings for this because it says to cook the farik for 15 mins, thats not long enough in my experience.

Yes love it in a soup. The smoked freekeh is especially good.

@soupyspoon No, I didn’t need to cook it any longer than the recipe stated. I also let it rest as the recipe requires. You probably had whole grain freekeh, which takes a lot longer than cracked freekeh.

Could you please give me a clue as to quantities of spices for chorba? I've got a huge selection of spices including harissa, ras-el-hanout etc, but I never know how much to use.

A generous pinch of cumin, cinnamon, fresh coriander, paprika. There are several recipes for it online. DH has it in his head! I can never replicate it!
