We have a damson tree in our garden and am after some easy damson recipes if anyone has any recommendations

Damson Jam with Muscat or Tawney Port.
Make like Plum Jam but add a little orange peel to the Port when soaking the fruit.
Add sugar and cook as for all jams.

Damson cheese! A set like jam to have with cold meats and cheese. Lots of recipes online. Pour it into small plastic tubs , cover and store and you can use them at Christmas. Damson gin or what I make now damson rum using white rum. The longer you leave it the better. Obviously jam! Damsons freeze well too. I love this time of year when we pick the damsons.

I made a batch of jam from the ones I harvested from the orchard. Very easy to make.

I used 1.5kg of damsons to 1.6kg sugar plus 400ml of water, which made 6 x 450g ish jars.

I've wrecked my cherry pitter from pitting the damsons though, but it otherwise worked quite well. What do others use? My pitter was a cheap one from Amazon, but wondering whether anyone has a better one.

Definitely a cherry pitter! They pit easier after being frozen and defrosted. I’ve taken to substituting them for apples pr combining them with apples. They work well in a crumble mixed with apples. I also made this cake with damsons, which went down very well. Nigel Slater has a chocolate brownie recipe or a chocolate cake recipe with damsons as well.

After pitting them, use to make Clafoutis. Serve hot or cold with thick cream or Greek yoghurt.

I had the most delicious Damson and vanilla ice cream this summer. I'd use a raspberry ripple type recipe and just use damsons instead

A really easy pudding would be damson fool. Poach the pitted damsons with some sugar to your taste. When cold fold into beaten double cream, or thick cold custard, or Greek yoghurt, or use a 50/50 mixture of custard & cream.
A similar idea is to serve the poached damsons with mascarpone or ricotta cheese that you've stirred some sugar and a few drops of vanilla essence into.
For extra interest, add some fruit liqueur such as creme de cassis to the poached damsons, and serve with some little almond biscuits.
