We have a group of friends coming for dinner in a couple of weeks. If the weather is half decent we’ll eat outside but would prefer not to barbecue.
There will be 12 of us - adults and older children with no allergies or significant food preferences. I’d like to do 4x big dishes for sharing that I’d serve with a couple of salads, new potatoes and crusty bread.
Thinking about a beef joint that can be sliced, a chicken dish, a salmon/fish dish and a veggie option. Ideally things that can be prepared in advance, put in the oven and then just brought to the table. If there’s a summer/mediterranean theme or they at least complement each other that would be even better. Happy to ‘over cater’ and eat leftovers afterwards.
in the past I’ve done things like lemon chicken, Spanish chicken, traybake salmon with vegetables, vegetable or chicken lasagnes, pasta dishes with kale/anchovies/ratatouille.
Has anyone got any tried and tested recipes that they could share please? My ‘go to’ is the BBC Good Food website but open to any ideas. I’m a fairly competent cook but won’t have hours and hours on the day for faffing around.
