I have relatives coming tomorrow and need to have food ready to put out on their arrival. I have a glut of tomatoes and want to do salad. I am not keen on Panzanella. So I need something to work with green salad and either salmon or chicken plus a carb (potatoes, cous cous, pasta?) Any good recipes out there?

Do you have sherry vinegar? Because if so, there are a number of variations of a tomato salad that work brilliantly with sherry vinegar.

Quick and easy:

Finely chop red onion (amount depending on tomato but I'd usually go for about half a medium red onion for one punnet of cherry/plum tomatoes)
Cut tomatoes into bite sized chunks.
Finely chop a small bunch of parsley
Dress with olive oil, sherry vinegar and salt

Or fry/grill/roast chunks of aubergine. Make a dressing of olive oil, sherry vinegar, garlic paste, chilli and fresh chopped mint. Toss cooked aubergine into the dressing, add chopped tomato, stir and season. Top with toasted pine nuts and some fresh mint leaves. You can add some buffalo mozarella as well if you want. But that makes it a lot more substantial.

Melon, Tomato and Cucumber Salad with mint. Chop /ball the melon and tomato how you want, peel strips off the cucumber lengthwise then halve (also lengthwise) and slice

My favourite is a salad with roughly chopped tomato’s, avocado, basil, red onion (thinly sliced and marinated in a red wine vinegar and sugar for 10mins before adding) and anchovies, mixed with the oil from the anchovy tin and a bit of extra virgin olive oil!

I'm doing a great one at the moment using mostly stuff out if the garden it's so simple but just morish

Sliced tomatoes

salad leaves

hot pitta breads with hot chicken with a spicy herby salty rub.

homemade houmous, and a homemade yoghurt, lemon, garlic and mint dressing/dip

Roast chickpeas in smoked paprika and salt cooked so they are still a little squishy

Roast beetroot chunks in a thyme and garlic glaze - salt and pepper to taste

Roast sweet potato chunks (just a little salt and maybe some rosemary and peppe)

People can then help themselves and make a salad with all the bits or fill a pitta bread with what they like.

The yoghurt dip is ESSENTIAl to the whole thing though as is serving the cold salad, yoghurt and tomatoes with thr hot chicken, pitta sweet potatoes and beetroot

Roast the tomatoes with some pesto on them and then add to a salad. Brownie points if you also add feta or cooked halloumi!
