Rice, kimchi and what veg?

have Pak Choi and Baby corn but doesn’t seem right to me.

I have shredded raw veg like white and red cabbage, onion, carrot

Not Korean but Morning Glory would work?

I'd do a Korean cucumber or/& carrot salad.

A coleslaw type salad sounds good. I’d love to be able to make a Som Dam type salad at home: but dear the ingredients are too niche for my backwater.
