We had a Thai chicken dish yesterday and burgers/salad today but I’m looking for inspo for the rest of the week!

We’re using up bits in the fridge before we go away so it’s French bean and potato sabzi with grilled masala paneer

We just had salmon with a yogurt tarragon sauce, new potatoes shd broccoli. I may or may not have put loads of butter on my potatoes 😬

Pizzas on the BBQ.
Tonight, it's halloumi on the BBQ with salad and wraps, and I have put some potato wedges on there too.
Quiche, pan fried herby gnocchi and salads.

We have Greek salad, panzanella and a peanut bulghar wwheaton that's delicious. And I'll shred some lettuce and maybe smash some cucumbers.

For my sins, im doing a paneer and aubergine curry on Friday!

I made a tuna pasta salad tonight and DC loved it! Really simple and I’ve not made one for ages so will be making them much more now. Took me about 15 mins.
Ingredients: tuna, pasta, mayo, salad cream, mustard, black pepper, Greek seasoning, cucumber, red pepper, shallot, sweetcorn (basically what we had in the cupboard and fridge).
I made an absolute ton hoping there would be more for the locusts (DC) tomorrow but there wasn’t a bit left. Must make it again asap.

This evening I made a delicious cream of asparagus soup.

Completely vegetarian and very much a “clear out the freezer and fridge” attempt. In varying quantities it was
scallion, garlic powder, carrot, outside salad leaves, frozen peas, new potatoes, frozen broccoli and three (!) frozen asparagus spears, veg. stock powder and white pepper. 25 minutes in the pressure cooker, whizz it up and add cream at the end. Served with crusty bread and soft cheese. The white pepper made all the difference.

Tomorrow it will be pesto chicken, ham and cheese roll ups baked with cherry tomatoes. DD will have ricotta, spinach and minted pea lasagne baked at the same time (2 portions for the freezer).

I’ve seen what looks like a nice recipe for roast veg gnocchi bake so I’m going to make that tomorrow. Trying to offset DH’s cooking which doesn’t include as much veg as mine…
