Halloumi question

I swear ages ago someone told me how to cut hallouni into cubes to put on skewers without it splitting, but I can't for the life of me remember. And googling hasn't really helped. think it might have been sideways, eg. Stood on the thin side, but I really can't recall if there was a magic trick to it. Does anyone have any advice please?

A block of halloumi is like a slab folded in two, so it will split if you insert the skewer in line with the fold. The fold line generally runs down one side of the block of halloumi. Identify the side, and slice at right angles to it. You'll be able to see the fold in the slice. Stick the skewer in across the fold, rather than into or along it.

Alternatively, don't bother with a skewer at all. Just grill the slices as you would burgers.

Thanks. I need skewers as am doing kebabs with red onion and chorizo. I'll do as you say. I normally grill slices so it doesn't matter, but want them to stay on the stick!
