Proper pub food vegetable lasagne recipe

This is random but I really fancy a really basic pub grub type home made lasagne, the type where its like a really basic sauce, almost tomato puree (but not)... hopefully makes sense! Does anyone have a recipe?

I know what you mean, the tomato sauce tastes like from a jar and pieces of white onion courgettes and red pepper usually. I would say buy a basic supermarket ready meal for similar

I love a proper pub lunch veggie lasagne. I think it comes from them being frozen and then cooked in the microwave. I wish more pubs did them now rather than some vegan burger.

Sometimes I make one with tins of ratatouille and homemade cheese sauce. It works trust me

I sautée onion, garlic in olive oil, add tinned tomatoes and dried oregano, water, seasoning and tomato puree, simmer until thick enough. Simultaneously chop courgettes, aubergines, mushrooms, peppers season and roast in the oven with more garlic (I roast a whole bulb) until soft , add sauce to veg. I usually let them sit together in the oven on low while I make the bechamel. Add fresh basil to the veg mix, then layer, veg pasta, bechamel, veg, pasta, bechamel, keep going until dish full. Top with the bechamel and cheese. I will admit I often put cheese in the bechamel which I know isn't the way it's meant to be but I like cheese!

Then bake for about 25 minutes until golden brown.

It does really well if you make it the day before then put it in the oven cold for 40-45 minutes and the flavours seem to get better

Yes!! A proper ploughman’s. Easy to make, no chef required. Simple for a lunch menu. Veggie and meat version are easy to create. Even vegan with a small amount of creativity.

@ChompandaGrazia i miss them, I remember having them one sixth of a lovely bakery type cob loaf, proper butter, decent cheddar, half an apple, pickled onions, bliss it’s just not the same when you do at home

A couple of years ago we went for a walk with a stop at a pub half way round. They did a proper ploughman’s with local cheese and pickles. We thought about doing it again recently but the pub has changed hands and the food is now all stuff that is confit of this and jus of that.

I've made a simple one with a bag of frozen Mediterranean vegetables, a jar of onion and garlic tomato sauce and homemade cheese sauce oh and lasagna sheets.
Always tastes better the next day tbh

@ChompandaGrazia actually now thats rings bells, in the 6o’s wasnt it the dairy board. Goodness knows why it’s not more available and no sourdough thanks I value my teeth !

Inspired by this thread I have just eaten some bake at home crusty rolls and Castello creamy blue was simple and delish 🐷
