Tin of pilchards which you can eat with a fork so also minimising washing.

Try Itsu spicy miso soup. Add to some water in a pan, heat, add some mushrooms, sweetcorn, a packet of prawns or half a pack of chopped crab sticks. If I have some cabbage in the fridge I may shred some to have, or perhaps bean sprouts. Really quick to make and no carbs.

it’s easy to make a potato free fritata, just add more veg. Good hot or cold. Loads of flavour combos, blue cheese and leek, red onion, pepper and courgette.

I have been involuntarily low carb for a few months now due to GD 😂

My lunches tend to be low carb or if I do have carbs, they are low GI carbs like:

Shakshuka, with or without bread
Omelette
Salad (boring though)
Bean salad (more interesting!)
Low carb picky plates, so cheese, cold sausage or chicken, vegetables, ryvita with tapenade or tomato/basil/mozzarella. Some fruit afterwards
Soups
Leftover fajita wraps (wholemeal)
Leftover chilli with a just small bit of rice, lots of toppings like cheese/sour cream/jalapeños though makes up for it
Leftover curry with small bit of rice

I have the picky plates most because half the time I just can't be arsed. I often have 2 ryvitas and then loads of cheeses, olives, sundried tomatoes etc or sometimes I buy the "low GI" bread bread from Lidl instead

Scrambled egg with loads of veg (I use up whatever is in the fridge or I have a glut of in the garden), top with cheese or chillies or both.

Salmon fillet and green veg. It’s pricey to have every day, but buy salmon on offer (currently 2 for £3.75 at Tesco) and freeze. I make both fillets and have one on the day and one the next, also good cold.
