Can someone help rescue my chutney.

I have made some courgette chutney and it's awful I thought maturing it for a couple of weeks would help but it hasn't. I've made too much to just throw it away so thinking I need to do something with it. It is very dry and crumbly with no sauce at all so thinking I need to recook it with added liquid but no ideas as to what and how much. Can anyone help?

Or perhaps you made bigger batch than the recipe shows. Sometimes it is much harder to make that work well

Maturing it for weeks is unlikely to be the solution. Try giving it a year (or two!) and you will probably find it much better.

Just very dry and crunchy very vinegary and sweet no depth of flavour

Had a look at some of my recipe books and compared. How long did you cook it for? Are they very young courgettes? Mine have been quite crunchy even after being in the slow cooker this year.

If it's already too vinegary then I'm not sure how to make it wetter. Unless you add something to it as you use it, apple juice maybe?

Thought I'd come and update. I think I've saved it, despite following the trcipe I think it was undercooked. Anyway I put it all in the slow cooker added some more vinegar brown sugar and a spoonful of treacle and cooked it for 6 hours and it looks and tastes so much better.
