Bring a dish for work

Hi all
I've started a new job.
we have a training day coming up and i’ve just been told that we all bring a dish for lunch.
I pulled ‘main’ out of the hat. Other categories were salad/sides, bread/cheese, sweet.

Two others pulled out main and one was veggie. Although I can choose anything. Luckily other then x2 vegetarian’s we have no other dietary requirements.
Will chat to the other ‘main’ people but looking for ideas.

Our boss brings in hummus, guacamole, & crudities etc that his wife makes, along with olives & dipping crisps/pita bread.

Any ideas for something tasty & easy to serve.

I have to admit not using sultanas and to using mango chutney and creme fraiche. Delish!!

Maybe that might be better. I think I could prefer it that way. I guess it's an acquired taste x

I would make pasta salad: on with tuna, sweetcorn and chopped spring onions + mayonnaise; and a smaller one with peas, sweetcorn, spring onions and chopper peppers for the vegetarians. Or just make one big veggie one

I would have said quiche too, but as a quick alternative pasta salad. Just boil some short pasta, mix it with whatever you fancy. My favs are tuna, feta, tomatoes, sweetcorn, fresh herbs.
Other ideas:

  • frittata or spanish omelette
  • pulled pork or chilli served with pitta
  • pasta bake (sausage and mushroom, tuna and broccoli,...)

I’d make pesto mozerella and tomato filled croissants- maybe some ham and cheese ones too. I’d toast them in the panini maker so they’re slightly crunchy too.

you could do a cold meat platter or similar based on the other categories

most other things will risk veering into cheese or salad territory unless you can reliably go for a hot option

Please no, not fritata. I've had some terrible fritata over the years. I know it sounds boring but sandwiches and rolls with really nice fillings.

I love a sandwich made with nice bread, easy to eat as well and covers the picky eaters (possibly!)
