Recipes using coconut milk other than curry

A cupboard clear out has turned up a couple of tins of coconut milk. I have a variety of curry recipes using it for but I’m always looking for new ideas so am wondering what other people use it for. I know I can Google but am particularly interested in tried and tested that people have really enjoyed.

I can recommend using it instead of milk to make a baked rice pudding. Optionally sprinkle with Demerara sugar once cooked and grill to brûlée . Lovely served with a baked fruit compote.

My default would be curries, but you could also make smoothies with it, or I've made vegan chocolate mousse before which is basically coconut cream/very ripe mashed avocado/cocoa + some kind of sweetener depending how sweet you want it. I'm not vegan but have made it for friends who are, and I have had it a few times during my current pregnancy as I have GD and it's low carb so doesn't spike my blood sugars :)

You could also freeze the smoothie in ice cream moulds to enjoy when we get another warm day!

I have a vegan recipe that is - cauliflower, aubergine and potato chopped into chunks and roasted in oven. Add 1/2 tsp each of cumin, all spice, cinnamon and chilli. Mix. Pour over coconut milk and return to oven for 5 mins. Sprinkle with cashews and return for 5 more minutes.

We did, used a bit too much red curry paste so it was a bit strong! Tried frying some noodles but they just burnt so left them off. But it was generally nice!

I often use coconut milk to make scones.... I add some dedicated coconut and cherries (or another dried fruit).....

I use it to make korma curries - Jamie Oliver curry paste recipe good and fry an onion then add paste (or use shop bought) then coconut milk - lovely

Makes a nice creamy tomato soup. Roast the tomatoes and onions and maybe some chilli first then blitz up with coconut milk.
