Best pasta bakes?

I’d love some recommendations for easy or quick comforting pasta bakes please!

I’m not a fan of jar sauces they just taste off to me - even though my kids love them 🤣

Bonus points if they can be made vegetarian!

Sauté onions garlic, tinned toms lots of olive oil pinch of salt and sugar, basil for 30 mins or so. That's the sauce. Rigatoni pasta. Then add peppers, cherry tomatoes, chorizo, mushrooms or whatever veg. Top with mozarella parmesan and fresh Pesto.

Cook pasta, fry chopped bacon, red onion, peppers, mushrooms and garlic. Add tin of chopped tomatoes, splash of balsamic, parsley, oregano and chilli flakes (can leave out if kids dislike. Mix with the pasta, pour into oven proof dish, top with breadcrumbs, mozzarella and Parmesan and bake for 25 mins.

Not very quick, but worth it... Warm some milk and add dried Porcini mushrooms, leave to steep. Strain off, reserve milk!! Chop mushrooms. Use the milk to make a bechamel. Stir through cooked pasta, add mushrooms, top with parmesan and panko breadcrumbs, stick in oven until golden brown.

Put garlic and herb Boursin in middle of oven proof dish, surround with small toms and a torn up bag of spinach. Drizzle with olive oil and black pepper and bake until soft and squishy. Mash down, add pasta water if too thick, then stir in pasta. Put back in oven with plenty of strong cheddar, grated, on top
Edited to add oven!

Sweat leeks, add bacon bits, stir in tub of cream cheese and mix in cooked pasta. Parmesan on top. Grill.

This is a good basic sauce, I make a big batch and keep it in the freezer. Then I toss it through pasta, add whatever the guys are in the mood for (meatballs, olives, artichoke hearts, bacon or whatnot) and top with cheese.

you can't go wrong with a simple tuna pasta bake, that's my favourite.

Cook (fry/oven/airfryer) cubes of aubergine, courgette, plus chopped onion, peppers, mushrooms, garlic. Add a tin of chopped tomatoes and half a tin of stock. Mix with cooked pasta. Grater cheese/cheese and breadcrumbs on top and bake. You can separate and add bacon to for meat eaters.

This is a slow cooker recipe but you can probably adapt it:

3 peppers (Red, green and yellow)cut in strips
Cut about 6 chicken thighs into strips
Packet of Fajita seasoning
About half a pack of marcapone cheese
About 300mls stock
Pack of passata
A few extra chilli flakes if you like
Throw all of these into slow cooker and cook on high for 3 hours

Then throw in about 350 grams of penne for 30 mins

Then throw in grated cheddar cheese for 10 mins

It's really nice.

Really quick, but not vegetarian - sliced green olives, sliced cherry tomatoes - or use sun dried if you prefer, drained tin of tuna, carton of double cream/tub of crème fraiche according to preference.
I reckon chopped mushrooms, or maybe spinach could work instead of the tuna, but haven’t tried it.
Younger children may prefer it with sweetcorn - mine used to and it does make it a bit sweeter.

Just mix everything together with cooked pasta or if you are in a hurry uncooked fresh pasta - or best of all, gnocchi - top with grated parmesan and bake for half an hour.

This recipe can be amended to have a veggie, tomato based sauce instead of mince. It can also be frozen and it defrosts very well.
