This is a coleslaw to serve as a side garnish for sandwiches & burgers (serves 1 person). Double the ingredients for a filling for a baked potato or a sandwich.
INGREDIENTS:
6 Tablespoons shredded Iceberg lettuce, 1.5 grated carrots, 3 tablespoons beetroot, 1.75 tablespoons beetroot juice, 1 large white onion, 3 tablespoons of radishes, 290ml mayonnaise, 1.5 tablespoons creme fraiche, 1.5 tablespoons salt, 2.75 tablespoons black pepper, 3 teaspoons mustard, 3 tablespoons vinegar, 2.5 tablespoons lemon juice, 2.75 tablespoons parsley, 1.5 tablespoons marjoram, 1 teaspoon sugar.
METHOD: Shred the lettuce, grate the carrots, chop the beetroot and slice the onions, finely slice the radishes. Add the remaining ingredients and mix in a large bowl, stirring thoroughly.
Serve as a side garnish to burgers, kebabs or paninis/toasted sandwiches.
