my godchild is home from Canada where she goes to school, for the summer. Last night late (9pm) I get a text. "auntie x, can we come to your house for a swim tomorrow?" Yes of course. Then 5 min later "and dinner?" cue me saying yes but now have to throw together a meal for 4 adults and 2 teen girls. One of the girls is incredibly picky, will never complain but not eat if there is nothing she likes. So. On the grill , I was thinking of filapino pork tenderloin kabobs, honey chicken kabobs, veg kabobs. I will make cold curried rice with shrimp salad, mexican corn salad and make a pepperoni pizza on the stone for miss picky pants. She also likes plain meat so should I throw a few chicken drums into the airfryer or stop pandering? It is not even 7 am here, and I have been up for ages.. rice cooked and cooling, marinades made and pork tenderloin sliced for the skewers, veg sliced, and shrimp thawing. Have to make a food shop run at 9 am so would appreciate any other suggestions if you think this is not enough (nobody likes a dessert , so no need to worry about that)

When you said last minute dinner I presumed something like sausage and chips... Or maybe air fryer beige (no judgement, we had this for tea on Saturday)
What you are preparing is way more than a last minute dinner, more like a full blown BBQ with assorted sides. You're doing more than enough, it all sounds delicious but you could also do much less of you wanted.

Sounds amazing...like the pp I thought it was going to be something like beans on toast 😂

Muchtoomuchtodo · 14/07/2025 12:11

Last minute, unplanned dinner here would be an oven pizza or a bowl of pasta!

That sounds amazing and they are very lucky you are doing that for them!

How wonderful. I wish I was coming to you for dinner. 🥰

I love them and I am happy to cook, their mother HATES cooking lol, so I am sure that she put them up to asking about dinner haha. I always overthink when it comes to having guests and my husband says that I cook too much stuff and run myself ragged (doesn't stop him from eating all the "stuff") I think I will skip the airfryer drumsticks.

everything is done..prepped, I am going to have a nap lol. They arrive at 3 and it is just after 1. My kitchen is a mess, but husband is on it. whew. all i have to do for dinner is skewer both meats and veg as they are all in big ziplocs with marinade.. but I will put my two teen nieces to work on that lol
