What's a nice roast chicken recipe for this weather?

Preferably in an air fryer.

I have chickpeas but they don't have to feature. Also have peppers, a courgette, some carrots, lemon, lime, rice, mange tout.

Grill the vegetables? Save the rice for another day unless you have super hungry people to feed.

All of the above plus olive oil, sea salt, pepper, chilli (flakes or fresh) and your preferences out of

smoked paprika
onions/spring onions in chunks/leek
garlic
cinnamon
cumin
coriander
ras el hanout
turmeric
garam masala
jerk mix
allspice

Coat in the oil, seasonings and citrus juice, roast together, chuck on salad leaves when cooked.

If its a whole chicken, I'd cut out the back bone, spatchcock, then cut up into smaller pieces- legs, wings, breast etc.

I'd either coat in a crumb mix or something spicy like a peri peri marinade sauce which would go with chickpeas.

I’ve got roast chicken on Sunday. Just doing it with lemon, garlic and maybe oregano then serving with pittas, tzatziki and some sort of salad.
