Have some mozerella to use up

I have a pack of unopened mozerella with tomorrow's date on it to use up and interested in ideas. I don't have any bread (but could nip to the local shop if needed). My imagination doesn't stretch beyond putting it on top of a pasta dish or a pizza.

I have minced beef as I was planning to make chilli for dinner

Caprese salad

Now as I write this thinking lasagne but need to check if we have lasagne sheets

Yes, with croutons made from leftover bread.

Or a thing I love to do with mozzarella at this time of year is serve it with a puree of fresh peas, olive oil and basil.

Buy some bread, make mozzarella sandwiches, brush with olive oil, shallow fry the sandwiches till golden.

I used to be able to eat a whole ball of that just standing at the kitchen worktop.

Dont forget to put salt on it.

It's delicious! I envy you your peas, as I am currently living on a building site. However, I have ordered peas from a grower at the farmer's market and am going to make it at the weekend.

Contrary to popular opinion I think that mozzarella makes a poor choice for cooking in something, its too bland

So best eaten fresh in a salad, or with a fork. Ahem.

I have to admit I do sometimes just slice one up and eat it with a sprinkle of sea salt and olive oil. Or a couple of drops of balsamic vinegar. I definitely prefer it uncooked.

I'd make aubergine parmigiana...if I could be bothered to buy aubergines. Or put the chilli in the oven and put some mozzarella and bread crumbs or seeds on top till it goes bubbly.

Cook minced beef, strain, add a 1 1/2 tins of chopped tomatoes, chop up 2 red peppers, put all into baking dish, break up mozzarella ball and put into dish add 3/4 pint of beef stock cubes, add dried oregano and basil, a pot of green pesto, salt and pepper and a dash of cream, throw a bag of gnocchi on the top and bake in the oven for 30 mins Tues. You can substitute minced beef for chopped chicken breasts and add red pesto instead of green. Serves 4.

Yes, my DC love it. Also I forgot to add a squirt of tomato puree too. If there is a portion left they squabble over who will get it.
