What are your go-to biscuit/cookie recipies?

I keep not buying biscuits when i do the weekly shop, and then find myself wanting a biscuit in the evening, or with a cup of tea.

I've long said we should make our own, DH is a chef and good at baking but he doesn't have time, i currently have time, so want to make some.

I have a great recipe for cardomom shortbread, and may make millionaires shortbread this afternoon.

But for next time? What do you all make?

I love a ginger biscuit, and have a really easy foolproof recipe. You can freeze the dough in a log and just slice it up and bake.

Easy AF. Sometimes switch out some flour for cocoa, or add smarties or chocolate chips. Have also been known to sandwich a couple with strawberry jam.

Thanks for the Fork Biscuits tip - we made them at school once (in my single half year of home ec)

Hope you can read this page! I don't even roll the dough out, I shape it into a sausage, wrap in cling film. Once chilled for 30 mins, unwrap and slice and bake. Easy Peasy.

Cupcake Jemma NYC cookies. You bake them from frozen so you can have a fresh one whenever you fancy. I make them for my husband.

I love Jane’s patisserie New York cookies, I only make the smaller size ones but they are delicious. I sometime double the recipe and freeze half the dough so I can make up a batch quicker.
