Meal ideas for hot weather

Share ideas here please. Meal planning with kids is hard enough let alone when it’s this hot.

Favourites here include rotisserie chicken with baguette and salad, smash burgers in buns. Many thanks in anticipation.

I mostly just tend to swap to a lot of salads and new potatoes vs pasta/and veg.

Steak/chicken/fish under grill or in a hot pan then salad and new potatoes on the side.

Or steak/chicken served on flatbreads with pickles/salads.

Use the gas BBQ quite a bit for the above.

Did a lovely sort of bastardized tacos bowl the other night - just cooked mince seasoned with cumin and paprika and garlic and chilli and a few other bits, then served on corn tortillas with grated cheese, a tomato salsa/salad, sour cream and avocado. went down a storm. will do similar next week and/or quick fajitas.

I do like to roast a whole chicken, serve at room temperature with new potatoes and salad and then turn leftovers into something the next day or use for sandwiches etc.

Potato salad, coleslaw, meat (cold cuts or hot) / fish, quiche, Spanish tortilla and tapas type bits

Things like home made hummus, tzatziki and banaghanoush, with nice bread. And any kind of meat kebabs on the BBQ.

Lentil, beetroot, spring onions and feta salad is nice and easy to make. Just add lemon and olive oil.

usual proteins with cous cous, rice salad or pasta salad and salad vegetables (grated carrots, cucumbers, tomatoes, sweetcorn not mixed together as ny kids won’t eat it combined).

things I can cook on the bbq or pizza oven, whole chicken on the bbq can be done in lots of ways.

we tend to eat the same things through the year, we are boring people. So this week we’ve had risotto, curry, home made burgers, pasta and then sausage hash on the menu.

Things we eat a lot of when it's hot are:

Jacket potatoes (cooked in the air fryer so I can avoid having the oven on) with cold toppings like tuna mayo, prawn cocktail, cottage cheese etc.

Ploughmans. Slices of ham, cheese, coleslaw, salad, pickled onion, chutney, bread and butter etc. Love this one because it's just an assembly job and no cooking required!

Falafel, hummus and salad wraps.

Cold noodle salads. Get some of the packets of pre cooked noodles from the fridge section at the supermarket and mix with soy sauce, lime juice, peanut butter and some sesame oil. Add in whatever raw veg you like we usually have spring onion, slices of pepper, grated carrot, bean sprouts and coriander. It keeps well in the fridge for a couple of days if you need it for packed lunches etc.
