Sausage casserole

I've made a sausage casserole for my son but he's been held up and can't make it tonight. How long can I keep it in the fridge safely please?

Should be fine for two to three days, then thoroughly reheated.
(It sounds lovely, ultimate comfort food.)

If he won't make it for more than 4 days, freeze it. You won't have much cooking when he gets there and will have more time to catch up. You will be a bit more rested too. Half full glass

Im so jealous right now i haven't had sausage casserole for ages. And I would of been sat their ahead of time with my knife and fork ready to go unlike your son. If you think of adopting at any time im great.😁

As long as the sausages were fresh ( or frozen quickly after purchasing) two or three days with no problem, four days would be ok to I recon but if I thought it was going to be more I'd put it in the frezzer

My recipe:

Brown sausages. Dice onion/celery/carrot and add for a few mins. About half tube tomato purée. Add a tablespoon of flour. Cook. For a few mins.

Then a glass of red wine and a tin of tomato’s and chicken stock (same quantity as the tin of tomato’s). Simmer for 30 mins or pop in the oven. Season and add herbs of choice (I often go with what’s the sausage seasoning).

Add a drained can of beans (or chickpeas) of your choice (I like butter beans) and simmer until thickened to your liking.

Edit re also add a bay leaf!

As it's going to be 30° within 24 hours, I might pop it in the freezer @Goodwitch9

Mine's
12 good quality pork sausages (browned)
4 sliced Carrots
4 sliced celery sticks
Large sliced onion

Sweat the veg, add salt and pepper, a tablespoon of plain flour and stir well.
Add a bottle of cider (scrumpy type) stir until it gently bubbles - add a little stock if necessary.

Return the browned sausages, two bay leaves and 3 or 4 sprigs of thyme.

Bung in the oven for 45/60 minutes.

Serve with mash and brocoli or savoy cabbage.

Roll on winter 😀

At least 5 days. I quite often make all the meals for the week on a Monday. Sausage casserole is one of them.
