Spicy cheese puffs

I’m going to add Indian spices to French cheese puffs.

Would it be best to add them with the flour in the roux so they cook a bit or with the cheese?

Depends on the spices but if you’re going to add cumin, definitely. Nobody wants to eat raw cumin!

Well in Indian cooking you usually toast or saute as a preliminary step. Wouldn’t you do the same thing here?

Then I would add them in whatever way will distribute the flavour best. That depends on your recipe.

Garam masala isn’t toasted at the start though is it? I’ll experiment with adding it at the cheese stage and report back.

Garam masala is a blended of already roasted spices. You can cook it, or you can add at the end.
