I'm making several victoria sponge type cakes and chocolate cakes. I want to make them 2-3 weeks in advance, freeze them and decorate on the morning of the fete. Will they be

a- awful

b- acceptable

c- just like I baked them that morning

We normally eat cakes almost as soon as they come out of the oven so I'm rather out of my depth.

choc cakes will be fine
victoria sponge doesn't freeze well at all IME - make something else that will eg carrot cake, fruit cake.

hi. i have no idea about the cakes, but wanted to say that we are no longer allowed to donate home baking to school fetes etc for food hygeine reasons......

just wanted to say, in case you go to all the trouble of baking cakes and not allowed to sell them... i'm very willing to take them off your hands though!!

If I pre-bake for school events I only freeze fruit cakes and then take them out the evening before.
They seem fine, but then I dont eat them!!
