Interesting coleslaw recipes without mayo?

I'm pregnant and craving zingy things. I want a shredded raw veg dish with some kind of zingy dressing. I want to eat it on a fork directly from the bowl, probably in very large quantities 😁

What are your favourites?

I don't have a recipe but Asda do a ginger and chilli slaw which I'm addicted to. It's very zingy. It's in the beetroot and pickled onion aisle 🤤

I take grated cabbage and carrot and then make a dressing as follows

low fat plain yoghurt
coriander
1 lime grated and juiced

blend the yoghurt and coriander and lime into a sauce and pour over grated veg.

sometimes I sprinkle some chopped jalapeños into the coleslaw

Much lighter than mayo and we only eat it this way now

Yorkshire Peach on Insta made a carrot coleslawy thing the other day. Sesame oil, sesame seeds, soy sauce, wine vinegar, sweet chilli sauce.

I haven't made it yet but it sounds lovely.

Look up Asian Slaw - here’s a good one link

The dressing is usually some combination of the following (not all of these)

lime juice
fresh grated ginger or paste
sesame oil
soy sauce
fresh minced garlic
herbs - coriander, mint
fish sauce
sweet chilli

I do one which is
shredded red cabbage
grated carrot
grated beetroot

Dressed with Greek yogurt, Dijon mustard and a bit of honey.
salt and pepper.

No idea where I got the recipe or the measurements but it’s delicious.

I do raw broccoli, thinly sliced onion and grated carrot in a peanut butter, black vinegar, honey, fish sauce, sesame oil and Lao gan ma dressing. Massage (this is important, it doesn’t work if you just mix it with a spoon) it all together, leave for at least a few hours but preferably overnight. It’s amazing. You can vary it and use kale.

Also do grated carrot, apple, thinly sliced onion and halved plum tomatoes in a dressing of mushed up avocado, vinegar, olive oil, salt, brown sugar, black pepper and (optional) finely diced chillies. Feta is quite nice in this, if I’m in that sort of mood.

I’d second the Nigella Vietnamese style salad…it’s lush. For something mega simple though, thinly slice a red onion and marinade in Sushi Seasoning (we get it in our local chinese supermarket but you can order on amazon….basically rice wine vinegar, sugar and water), then mix with finely shredded cabbage and grated carrots. Just a really simple coleslaw variant but very tasty.

Simple one - shredded cabbage, onion and carrot, salt, lemon juice, rice vinegar, let rest, add pepper. Then you can mix it up by adding

Yoghurt and cucumber, dill, mint or chives
Beetroot vinegar, dill
Raspberry vinegar, thyme
Orange juice and thyme

Olive oil and basil or oregano/marjoram
Lime and wafer thin ginger, red chilli, coriander
Feta and mint
Sesame oil, toasted sesame seeds or tahini whisked up with a little hot water

Capers, olives, pickled garlic
Cheese stuffed preserved chilli peppers

Shredded broccoli, sesame and chilli

Switch out cabbage for fennel and blood oranges
Baby corn and edamame, coriander and sesame oil

Peanut butter, apple and thyme

Any other nuts, pulses and seeds you fancy.

Creme fraiche makes a lovely alternative to mayonnaise and is more ‘zingy’ anyway.
Can I just check something though: : I understood that shop bought mayo made with pasteurised eggs is ok during pregnancy, it’s just homemade with fresh eggs which should be avoided? Both Hellman’s and Tesco mayo are made with pasteurised eggs, this is what mg pregnant niece told me when I was making coleslaw for her BBQ recently.

For anyone who is ok witb mayonnaise, a mix of mayo and creme fraiche /Greek yoghurt makes my favourite dressing. My favourite additions are mustard, fennel seeds, finely chopped spring onions and chives - dried work as well as fresh.

I came on to say this. I’ve only had it in restaurants but need to find a recipe to try. If anybody didn’t understand the concept of ‘zingy’ this would teach them in one forkful.

Oh wow, thank you all so much! Loads of these are exactly what I was looking for 🤩
The mayo isn't an issue in terms of pregnancy risks, it's just that I don't feel like creamy things at the moment.
I'm going to try a couple of these ideas out this week!
