I’ve got loads of potatoes to use up. Done the usual mash/cheesy mash, boiled etc. Looking for something else. Any good spud inspired recipes? Whats your go to?

Boulangere
Thinly slice 2lb of peeled potatoes and two large red onions,
50g butter
Some herbs something like rosemary or thyme depending what you're having them with
275ml stock veg or chicken
Mixed with 150.ml milk

Medium size oven proof dish

Layer
Onion
Potatoes (single layer)
Dot with butter salt pepper scatter on herbs
Onion

Continue and finish the top layer with the potatoes butter and herbs
Gently pour over the hot stock and milk mixture
Bake in the oven on 180 for about an hour, leave to rest for ten minutes or so before serving, slice into squares and use a fish slice to lift each portion out

Hasselbacks are fun but a lot more of work, worth trying once.

I frequently do this, peel and boil potatoes until juuust underdone. Drain and put back in the pan. Add garlic, a slosh of cream and seasoning and a slug of butter/olive oil. Toss and crush slightly with a fork. Tip into a baking dish and roast for 20 minutes until it browns up.

I roasted a chicken last week with olive oil lemon oregano and other herbs. I then placed sliced potatoes which had been par boiled for 3 minutes in the ‘juice’, cooked them in the oven while the chicken rested, and they were yummy.

I boil them, then cube them, fry off in a bit of oil in a frying pan then add a homemade garlic butter. DD loves them. Don’t have them like this too often.

Roast them but with whatever herb/spice combo you like.

If I’m doing them for the kids it’ll be something like garlic powder, onion powder and dried herbs but for adults I tend to use more spice. If you aren’t confident the pre mixed spice packs are great for this

I always add more potato to these that the listed amount and you can replace/add the runner beans with peas. I found it when trying to use up a glut of runner beans last summer.
