I have chicken thighs, a leek and some potatoes...

...how do I make them into something interesting?

Have got the usual store cupboard stuff as well, and lots of herbs and spices

Allrighty then!
well here's the basics and if you prefer Comeoverneer to me then you can put some puff pastry on the top of it and call it a pie

peel and slice your potatoes in to 5mm thick slices
par boil them for 5 mintues
chop some onion or ideally shallot and sweat it it butter and olive oil for 5 minutes, then add the dried herbs and the leek sliced up and saute for another 5 minutes
add a slosh more oil and turn up the heat slightly and add the chicken thighs to brown them
be sure not to crowd the pan, you may have to do it in two batches
turn up the heat more and add salt and pepper, a pinch of nutmeg and a glass ofwhite wine, let it all bubble for a couple of minutes and then add the potato slice and stir well but gently to coat with the oil and butter and then turn down the heat and add the creme fraiche. Put a lid on it and simmer for 15 minutes or until the chicken thighs are cooked right through at their thickest part
