about to have a tonne of raspberries, recipe ideas please!

My raspberry bushes have gone mad this year and unless the birds get them I will have loads.

Any suggestions on what to do with them will be greatly appreciated.

Make eton mess. Buy or make merigues, whip up cream, schmoosh a few raspberries and leave the rest whole, bung the while lot in layers (wine glasses if your'e feeling posh) delish..

if you freeze them in 1lb batches you can make small amounts of fresh jam throughout the winter. It's a lot less of a daunting task that way

put some in a freezer bag, add a tbsp or two of sugar.

freeze for 2 hours. Take out and squish them about in the bag to make them mushy.

whisk some double cream, and then add it to some mascarpone (equal quanities) then fold and swirl in the raspberries.

Yum!
