Has anyone got the recipe for Delia's fat- free sponge? or another one to hand

2 eggs
3ox sugar
3ox flour

whisk eggs and sugar together until mixture leaves a tail when you pull the whisk up. Fold in the flour.

Bake at 200C for 7-10 minutes or until a skewer inserted in middle comes out clean.

It's not Delia though!

I use it to make swiss roll though, in a rectangle tin, so will need more cooking if thicker in a circular tin.

4 eggs
4oz sugar
4oz flour

Same method as before, whisk eggs and sugar till thick and dubled in volume, add flour.

I add a pinch of salt too.

think you need to separate the eggs. Whisk the yolks with the sugar. Then whisk the whites. Fold in the yolk and sugar mixutre alternatively with the flour into the whites

ype seperating the eggs is how delia does it iirc. It gives a lighter spongier cake but isn't entirely necessary.

recipe for Delia Smiths Fatless Sponge is;

3oz plain flour
1/2 teaspoon baking powder
3 eggs
30z caster sugar
