Dips. Hummus and everything else

I've been making a lot of hummus just lately. It's the weather for dips and crudites isn't it? I fancy doing other dips. Salsa's appeal and we have a glut of tomatoes but any dip recipes would be lovely if you'd like to share.

Green Goddess Dip

1 small avocado, flesh scooped out
4 tbsp Greek yogurt
2 tbsp mayonnaise
1 tbsp lemon juice
4 spring onions, chopped
½ tsp dried tarragon
¼ tsp mustard powder
Freshly ground white pepper

Whizz everything in a mini blender.

Tzatziki - grated and squeezed out cucumber, greek yogurt, dried mint, garlic granules, EVO and salt.

Ranch style yogurt dip - greek yogurt, mayo, lemon juice, salt and pepper, dried chives, dill, parsley. More herbs than you think you need, it should be nearly green. Amazing with wedges.

Mayo, egg or chickpea water, I use a stick blender, flavour with garlic granules or sweet chilli sauce or fresh herbs depending on what you’re having it with. Vegan version lasts much longer than the egg one but both delicious.

Have you made your own pittas? So much easier than I thought it would be and we have them often.

Philadelphia- spread a thick layer of it over a small plate / drizzle sweet chilli sauce all over / drape in chopped coriander = gorgeous with tortilla chips

Mango salsa - diced red onion, mango and red pepper, lime juice, red chilli, coriander

Spicy feta - based on ones I've had in Greece
Mash feta
Add a bit of natural yoghurt to loosen
very finely chopped fresh green chilli
black pepper and a squeeze of lemon if you've got any

If you’re feeling really lazy, crème fraiche with sweet chilli sauce drizzled through it is delicious.

Watercress tzatziki......finely chopped watercress, Greek yoghurt, celery salt, pepper and a squeeze of lemon juice all combined well together. Delicious as a dip for fish goujons or whitebait.

I've been whizzing up various veggie dips in a quest to find a healthier substitute to the mayo I used to eat too much of.

Here's my favourite:

Tsp chopped garlic
Tbsp olive oil
1-2 Tbsp lemon juice (still experimenting on best amount)
160g mixture peas & broad beans (cooked & cooled as I buy them frozen)
70g fresh spinach
Handful fresh parsley
Half pkt fresh basil
Salt&pepper

Directions : bung it all in the liquidiser and whizz until smooth. Taste, and adjust seasoning as needed

Use the vacuum packed beetroot for this, not pickled beetroot. Blitz chopped cooked beetroot, Greek yoghurt or sour cream or cream cheese, with some creamed horseradish for a robust earthy dip, great with rye bread.
Or you can mix the creamy beetroot half and half with a bean purée, haricots or butter beans work well.
I also like a purée of haricots verts, Greek yoghurt, and a little garlic, good with oatcakes.
