Using up pickled onions

i have a jar of pickled onions, bought at Christmas to go with cold cuts etc but never opened. Whilst I know you can just eat them on their own, with salad/sandwiches or my favourite with fish and chips, i was wondering if there were recipes which actually work better with pickled onions than regular ? Or just more interesting ways of using them. (I know they will keep probably til next Christmas but am trying to clear out shelf space, hence trying to use stuff I’ve had a while. There may be more similar tbreada to come!)

They work really well in stores/casseroles particularly sausage or beef.

Serve them with roast beef, cottage pie etc. I've never cooked them into these things, you'd lose the crunch but the flavours do go together well.

Just use anywhere you would use fresh onions.

Thank you all. I’m not entirely sure they would work well in all dishes where you’d use regular onions - I’m not sure a quiche would benefit from the pickled taste for example. I’m siure certain stews would. I guess I was looking for ideas where the pickled flavour would add something.

@OMGitsnotgood these recipes specify using pickled onions. The Jamie Oliver one was actually the first one that I tried and loved the results so i tried them in sausage casserole with peppers,tomatoes and butter beans. Once they've cooked down for such a long time they lose the strong vinegary taste and just add a nice acidity to sauces and they have a lovely texture. The sausage rolls I haven't made myself but I have eaten them as a friend makes them for parties and they are lovely, I'm convinced my OH only comes to events for those sausage rolls as he raves about them 😅.
