You can also slice and freeze if the quantity is really too much!

Cook them down long and slow with a good amount of butter. Finish with cream, lots of pepper and nutmeg. They freeze really well like that.

Leeks freeze brilliantly without blanching... one of the only veg to do so.
When cut up put in a freezer bag but lay them flat in the freezer until frozen.
Once frozen store in freezer how you want ... l then use from frozen and not watery at all.

I do a really nice pasta with leeks - I think it might originally have been a Gregg Wallace recipe, but don’t let that stop you.

Cook off sliced Parma ham or pancetta until crispy then remove from the pan
Add butter to the pan, then add your sliced leeks and some chopped garlic (I usually do two cloves) and salt and pepper
When the leeks are starting to go golden, get your pasta on to boil. Add the ham back in, then a tub of single cream (I use dairy free) and a load of Parmesan cheese
Add the drained pasta and serve with more Parmesan on top

I’ve subbed in a mix of different types of mushrooms for the Parma ham for veggie friends, just cook them in butter with garlic before the leeks. I use two big leeks to serve two people.

A large amount will cook down though.
I’d cook the lot in butter with bay leaves and seasoning. Then separate and with one half make leeks in cheese sauce by mixing in some flour, then milk the mustard and cheese and then baking with a cheese n crumb top.
With the other half I’d add potato and chicken stock then blend to make leek n pot soup with some cream to finish at the end.

I love Leeks and add them to pretty much everything.

I used up my leeks as follows.

  1. Peel and slice potatoes thinly. Parboil and drain.
  2. Fry chopped leeks and set aside.
  3. Slice and fry bacon.
  4. Put a layer of the sliced pots in a deep dish.
5 Sprinkle over some of the leeks and bacon.
  1. Repeat using up all pots, leeks and bacon.
  2. Pour over whole milk/double cream.
  3. Spread a layer of cream cheese.
  4. Top with panko.
10. Stick in oven for circa 1 hour.

I LOVE this and have just added it to next week's meal plan now I've remembered it! So quick and easy Crispy leek fried rice

I also really love Amy Sheppards creamy leek and cabbage, it's my favourite side dish if we're having steaks/chops/gammon etc. I also love a cock-a-leekie soup (minus the prunes!), chicken and leek risotto and I also had a lovely sausage and leek pasta with gochujang which I think was a Gousto recipe.

Lots of ideas. I hadn’t realised they would freeze easily so that helps. But definitely thinking a creamy/cheesy situation will happen this week

I just slice them up and freeze. I use the largest size of ikea food bag snd they freeze fine without needing to be blanched or anything. Literally just cut up, put in bag snd freeze then I have them any time I need leeks.
