Ages ago I saved a link to a recipe for a hot (as in eaten hot, not spicy hot) sauce I'd made which we had with salmon. It was fairly easy and quick and tasted great. I would very much like to make it again but the link is now dead! I thought I might be able to find a cached version but I can't. All I can remember is the ingredients included chervil and some other herbs (see below), and (unusually) some mayonnaise was whisked into the hot sauce, which I think was made with some form of vegetable or chicken stock. It may have been thickened with cornflour. There may have been a base of finely chopped shallots, perhaps simmered in a little wine vinegar. I wouldn't be surprised if there was a little mustard in there too. I can't remember when the herbs and lemon juice were added. Probably at the end for freshness?
This is the original link. https://www.eatingwell.com/recipe/248697/light-lemon-sauce-with-herbs/
When I search, I find a link to another site which clearly piggybacked on that original. That link which also doesn't work now, but it shows in preview some of the ingredients:
Ingredients · 2 teaspoons chopped fresh parsley · 2 teaspoons chopped fresh tarragon · 2 teaspoons chopped fresh chives · 2 teaspoons chopped fresh chervil · 1/3 cup ... [Frustratingly, that's as far as it goes.]
In my searches, I've also come across the picture that went with the recipe (from a post of mine on MN recommending this recipe!), so that's attached too (will show up in a few seconds after posting).
I've been looking for similar recipes but everything I find is either a lemon and herb-flavoured mayonnaise, a herby lemony vinaigrette, or when I do find sauces to be eaten hot they are made with butter and/or cream. What I liked about the one I've now lost is that it was not too rich. The lemon and herbs really came through as the dominant flavours. However, I think if I could find one made with butter and lemon, or cream and lemon, that's probably my best bet now. Any recommendations? Thanks in advance!
