Easy vegetarian air fryer recipes

Am an air fryer noob. any good sources for quick veggie dishes?

cut aubergine into eighths but leave it joined at the top so it’s easier to move about with your tongs.
microwave it for five mins and airfry a fat clove of garlic at the same time.
squash garlic, add oil, flop aubergine around I. The mixture then put it in the airfryer for another five mins.

eat on toast with a dollop of hummus and parsley/cold tomato.

A regular lunch for me is cherry tomatoes in the air fryer with a red onion cut into chunks and a couple of cloves of garlic. Bit of olive oil, a few drops of balsamic and some chilli flakes. Bake for about 20 minutes and serve on couscous (or a lentil pouch if I have one) with some feta. So much easier and quicker than roasted veg in the oven.

Not a whole meal, but I often do quick roast potatoes for DD in the airfryer. Not quite as good as proper roasties, but great for a quick easy option.

I would think a fajita mix with halloumi would work well.

I do the tomatoes in air fryer thing a lot and inspired by this thread, have just popped some in. I'm going to hav them with Quinoa though.

this isn't a veg meal but something I do often is quick banana muffins? Super easy.

Mash one ripe banana
Add 100g dry ingredients - I usually do about 60g self raising flour and then add a mix of oats, almond meal and wholemeal flour.
1 teaspoon baking powder
1 egg
3 tablespoons of wet ingredients - you can experiment here. I usually go for one of syrup/honey, then one very large one of greek yoghurt and a small one of oil.
Pinch of salt and a bit of vanilla essence.

Into the airfryer in individual ramekins for 13 minutes. My airfryer runs hot and heats up quick so for most it's probablu 13 minutes preheated or 15 minutes from cold.

Chickpeas! Drain, dry a little with a paper towel, spray with oil spray. Coat with a little smoked paprika (or seasoning of your choice), salt and pepper. Air fry for 10 mins or so until crisp.

You can eat them as a snack, but I like them in a salad with crumbled feta, red onion, lettuce, cherry tomatoes and some jarred red peppers.

I’m new to my air fryer too! DP made some amazing sweet potato fries last night. We had them with scallops (because they needed to be used up) and chorizo.

Tofu - cube it and air fryer it with a bit of oil and add to stir fries or Thai curries

Cut potatoes into small chunks, bit of oil, herbs, spices

Tinned potatoes- dry well and air fry with a bit of oil, paprika, oregano, thyme

Put red onion chutney on a crumpet, top with cheese, air fry

corn on the cob
