Varied lunch for 2 and 4 year old?

We do sandwiches and cucumber sticks/fruit to absolute death. Any ideas for quick easy healthy children's lunches? They don't eat eggs or soup. Help.

Fish cakes? If you made a batch they'd reheat fairly quickly. Serve with salad or peas/sweetcorn.

Beans on toast.

Jacket potatoes with various toppings. Although not quick to cook they're quick to prepare and you can just leave them to cook.

If you have leftover cold rice you could fry it up with bits of meat and veg in pretty quickly. Could even do egg fried rice and see if it gets past the kids as you can't really see the egg once it's cooked.

Cold pasta or rice salads made ahead of time.

Even just cheese on toast or a toastie would feel different to a regular sandwich.

Cheesy or pesto pasta or just plain pasta if out and about. With veg of some sort, peas, cucumber, carrots, tomatoes, peppers.

Hummus and pita or breadsticks or crackers. Veg as above.

Ploughman’s - ham or cheese, bread, crudités, pickled onions and gherkins, apple slices, could also do with cocktail sausages or mini pork pies.

Loads of variations by changing the bread, pita, wraps bagels, baguette.
and variations of ‘on toast’, beans, avocado, cheese, mushrooms, tomatoes.
quesadillas.
jacket potatoes or sweet potato's with toppings
rice noodles with peppers, sweet corn and grated carrot, chicken a little sesame oil and lime juice stirred through
crudites, breadsticks, hummus/cream cheese/guacamole
home made nachos (just a wrap chopped into triangles and baked) topped with salsa, taco beans, cheese etc)

Mine are four and nearly two

We have

Home made pizza (just flatbread, tomato puree, grated cheese and a choice of toppings)
Stir fry (really easy with some ready made veg and noodles - I just add a bit of chicken)
Good old beans on toast!
Tuna or chicken pasta with sweetcorn, avocado and Greek yoghurt
creamy tomato pasta - it’s just tomatoes with cream and hidden veg (grated courgette and leek) with cheese.

Mini sweet corn
Chicken bites (home made - just slice bits of chicken fillet having marinaded in Yoghurt, lemon and garlic)

Mange tout
Wraps with shredded chicken, cucumber, finely shredded carrot, a bit for sour cream if they'll eat it.

Good quality chipolatas, mashed potato, brocoli.

Noodles and stir fry veg.

Crackers, good ham, diced cheese, cherry tomatoes.

Strawberries, grapes, melon, sliced apple.
