Glut of eggs. What can I make

Stupidly took delivery of a dozen eggs last night without having checked that there was already at least a dozen and a half in the cupboard.

There’s only me eating in this house so can I have your best recipes for egg based things that I can freeze

The only thing I can come up with so far is quiche

Tortilla and frittata. Any of the Italian or French style chocolate cake recipes (butter, eggs, dark chocolate and usually a small amount of flour or almond flour). Any sponge type of cake (without icing).

I have in the past made and cooked things like French toast, pancakes etc and frozen them.

Lemon curd. Cakes and then freeze them. You can actually freeze the eggs if you separate the yolk and egg white.

I'd make frittata. Add loads of cheese, onions and maybe some smoked bacon lardons. Cut in wedges and freeze. Really handy for work lunches, and with salad. Or even warm for breakfast.

I make a massive omelette, frittata type thing and slice into wedges and have as a quick meal. Two minutes in air fryer to heat through. Current favourite is feta and tenderstem brocolli. Or a bread and butter pudding can use whole eggs for the custard. It freezes well so can bake and portion.

I would separate them out and freeze them. Egg whites can just be frozen normally but yolks you’ll need to add a pinch of salt or sugar and freeze them in ice cube trays.

I don’t eat it at all often but homemade lemon curd is a revelation.
