🍋Lemons what cake can I make but not drizzle?

Got 4 medium size lemons and want to make a cake. Did lemon drizzle last week.
Any suggestions? Nothing too complicated!

Ooo lemon cupcakes are my favourite. I’ve used the Primrose Bakery recipe before and they turned out nice. Lemon butter icing made with zest and squeeze of juice is really nice!

It’s very easy to make lemon curd. And very different to shop stuff, unless it’s Tiptree which is grand.

I make a cake with lemon, blueberries, chocolate and marzipan - and with a lemon glaze on top. It's inspired from a local bakery chain, but improved (lots) by me with some added ingredients (the marzipan and mixed types of chocolate, for instance). The cake gets devoured every time.

Make a sponge with the lemon zest, use the juice for curd or basically a simple version of it, half cup water, half cup lemon juice, 3 level tablespoons cornflour, 3 egg yolks, throw the lot in a saucepan and whisk together to get out lumps then bring to boil whisking continually (will only take minutes), add whatever amount of sugar you think it needs to get to sweetness level you like then strain it through a sieve and add a matchbox size bit of butter, stir until melted, place parchment or cling down on surface to stop skin forming and let it cool. Either use on it's own in cake with layer of cream/buttercream or add to the cream, I prefer them separate but either works.

I make a basic pound cake recipe but add in earl grey, tea soaked , mixed dried fruit and grated lemon zest. Delicious!

I quarter and open freeze surplus lemons, pur into a bag or box once frozen. Then just take out when a recipe calls for lemon juice, defrost in microwave if necessary.. I sometimes chop a frozen quarter in half and add to G&T

Use them all to make lemon curd, the spend every day eating it on crumpets, until it runs out. Then buy lemons again and make more.
