Omelette fillings. What's your favourite?

I have been gifted an omelette maker. I never eat breakfast or lunch and need to up my protein so it's a much appreciated, thoughtful gift. So please don't comment that it's a useless gadget , just use a pan and the usual stuff that's spouted on here when stuff like this is mentioned (especially on soup maker threads 😅). What are your favourite omelette fillings? I already have the usual cheese and mushroom and had an amazing Bombay omelette for my lunch today but would love some more inspiration!

I find mushrooms can make an omlette a bit wet. DM’s Spanish omlette was my favourite with sliced potato, onion & peppers.

my absolute favourite is cheese and mushroom with chives. My DH occasionally puts beetroot in an omelette (as it's a vegetable...hmmm) - don't.

I usually make garlic, mushroom, spinach and cheese. Sometimes chilli.

@ouch321 I should have worded it better tbh it's very much not mumsnetty as I sustain myself with crisps and copious amounts of Pepsi max and I have an occasional pack of noodles 😅.

My favourite is an "Indian omelette". I add a little cooked white rice, some sauteed onions and curry paste to the eggs. I guess you could add other things too (maybe cooked chicken) to your taste. After that I like a mushroom & onion omelette.

Try this recipe if you like things a bit spicy. I left out the leaf coriander as DP doesn't like it, and I didn't have either of the chutneys available, but HP sauce is a decent substitute given that it's quite sweet and has tamarind in it.

("Pav" is a soft white bread roll, but you can also just make an omelette and use a knife and fork.)

I genuinely cannot it make omelettes so I am definitely going to treat myself to an OM . I do have a soup maker and it is absolutely brilliant.

Bacon, mushroom and avocado is my favourite omelette.

Sometimes add a bit of chopped spring onion, mixed peppers or tomato to that, depending on what I fancy and what we have in.

I made a wild garlic and egg omelette the other day. I cracked a whole egg into the pan amongst the beaten eggs. It cooked perfectly so I had an omelette with a runny yoke in the middle. It's my new thing - egg omelettes!

I will try this - sounds fab! Gotta love Mumsnet.
