Friends over for dinner tomorrow - need cheap and cheerful recipe...

...preferably including some of the following:

parmesan or chedder
potatoes, rice, pasta, noodles, bulgar wheat, sweet potato
spinach
frozen tuna
frozen miscellaneous white fish
frozen chopped peppers (mum went to Iceland yesterday)

Hmmm, that's all I have I think. Don't minding adding some ingredients but want something that is going to be cheap but suitable for company (4 adults and a baby).

I'm not very good at this making up meals thing.

how about fish pie?

Steam/poach enough assorted fish for the number of people. Boil and mash the potatoes and/or sweet potatoes. Defrost some of the chopped peppers. Make some cheese sauce (melt tbsp butter over a low heat, stir in a tbsp flour, then add 3/4 pint milk, bring to the boil stirring, when it starts to thicken throw in a handful of grated cheese and stir until the sauce is thickish). Put the fish and chopped peppers in an oven proof dish, pour the cheese sauce over, put the mash on top of that, sprinkle on some more grated cheese, and put it in the fridge until you are ready to cook it (you can prepare it this far in the morning or even the day before). Then stick it in the oven on 180C for 25 mins.

I usually serve it with either green veg (peas or broccoli) or a salad. Sometimes I cheat and put the peas and some sweetcorn in the pie.

If you want to make it posher, you can put some prawns in, but it's fine without.

oh i hate fish pie with prawns, but you're right, roskva, people put them in to try to be posh. just a mix of white and smoked fish imo.

i wouldn't put the peppers in, though, but maybe a layer of spinach? i tend to put a layer of frozen peas in and then a layer of chopped boiled egg before the potato. yum.

you could roast the pepper until soft then slice and serve cold in olive oil as a wee side dish.

I personally ignore the bit on most recipes when you put in white wine, and use extra stock in its place.

Thanks for the tips, I have found a direction here a could still use your inspiration.

Will think about the fish pie though as I still have my fish to use up.
