Velveting beef

Can I velvet beef that has already been cooked? I have some leftover roast beef that was a bit chewy - can I velvet it with bicarbonate of soda or cornflour before stir frying it?

You can't velvitise meat that has already been cooked - because the protein structure has changed (plus the whole point of velvetising meat is to avoid over-cooking and drying it out, so once it's been cooked you've already defeated the point).

You could try - but at worst you'll end up with funky tasting meat.
