BBQ Food

With a week of good weather coming, and a spanking new BBQ, we're planning lots of outdoor cooking this week.

New BBQ is hybrid, so we could cook on gas or charcoal. We have a rotisserie .

Not a fan of burgers or sausages, and generally there will only be 2 or 3 of us - what should we cook?

Marinated chicken pieces (thighs are my preference) and big chunks of red pepper, then eat with green salad, tomato salad, potato salad and an array of sauces and dressings.

My favourite mid week is tandoori chicken on the bbq. Marinate the night before and it’s a quick dinner with naan and salad.

At weekends I like to have the bbq on low and roast a larger joint of meat. We’ve had lovely slow roast lamb shoulder which I served with Greek salad, a red cabbage salad and pita.

Lamb koftas, served with yogurt and flatbreads or a couscous salad. Tom Kerridge has a great recipe for the bbq but there are simpler recipes, like the one on BBC Good Food.

These tuna burgers are popular in my family https://www.jamieoliver.com/recipes/fish/the-best-tuna-burger/ Ditto this salmon https://realfood.tesco.com/recipes/spiced-blackened-salmon.html

Spatchcock a chicken and season with lemon/garlic/herbs or a Mexican seasoning…yum.

steak served with mushrooms bbq’d in tin foil packets (add butter, salt and pepper to mushrooms on a double layer of foil, bring sides together and seal well across the top, then just place on the grill) or the massive breakfast mushrooms sitting with the frills facing up directly on the grill, seasoned with salt/pepper and some blue cheese scattered over the frill.

a mix of peppers, onions, courgette and mushrooms on skewers are delish.

for dessert, a cooking apple which you have taken out the core and packed the hole with a mix of sultanas, brown sugar and cinnamon before wrapping in foil is delish.
