I’m cooking some sirloin steaks tonight for our anniversary. I think they’re a standard cut, not thin but they don’t say thick either. We have a ceramic hob which goes from 1 to 9. We like our steaks medium well (sorry!) so not sure how long to cook each steak in total to get this? We do have a thermometer to check it reaches 60-65 but would appreciate any help with timings please! Also not sure how many minutes to rest them and if I should loosely cover with foil when resting to retain heat? Thanks so much!
