Quick prep/cook meals for hot weather next week

Just preparing next week’s meal plan and shopping list. We’ve a heatwave forecast here for most of next week so want low-prep meals suitable for hot weather. I don’t mind some cooking, just not standing over a hot stove for ages. Am also trying to lose weight so the healthier the better.
Thought I’d start a thread as I assume a lot of the uk will be having the same and I always pick up fantastic ideas from these sorts of threads

I am thinking about:

tandoori chicken thighs with salad and coleslaw. Will cook extra chicken to use in another meal eg fajitas

Spaghetti carbonara as it’s so quick to cook

Homemade turkey burgers & salad

But also happy to scrap all of the above as I am sure you will have some fab ideas.

Thank you

Tbh I buy a ready cooked chicken, and a load of salad bits. Pasta salad and cous cous are lovely 😍

Salmon fillets baked in the oven and flaked into a salad made of

A grain or new potatoes
Peas
Chopped celery and cucumber
Courgette ribbons (just use a peeler)
Green herbs
Lemon juice, salt + pepper

Could just as easily use tofu or feta or goats cheese instead of the salmon

Mediterranean veg traybake with couscous or rice or orzo or quinoa or potatoes/sweet potato in the tray

Again there's a bit of chopping but it's not hot/can be done in advance/ whole thing bunged in the oven and left on a timer, can be eaten cold the next day

We live in Aus so a lot of our meals need to be suitable for hot weather. Just think protein and salad. Meat/fish can be cooked on the stove/in the oven/ on the bbq and salad can be anything from lighter leaf based to heavier grain or pasta based. Our latest favourite is spatchcock chicken marinated in oregano and lemon with a Greek salad and flatbreads. None of us are vegetarian but I’m sure you could adapt.

South African here. Totally agree. My simple, easy, hot food meals are mostly things involving some kind of basic protein baked/fried/grilled with mixed salads, sometimes cooked/warm sometimes just raw and cold.

If I can throw on the BBQ, even better (and I'm a total convert to gas BBQs now for convenience). I also often use the BBQ to make veg/salads as well - eg griling aubergine then turning those into a salad/side dish with oil, balsamic, garlic, chilli, mint and some feta or mozarella, or chargrilling lots of greens and serving on couscous with a tahini/lemon/yoghurt dressing. I'm currently craving mushrooms wrapped in bacon which I referenced on another thread recently so I'm probably going to do those over the next bank holiday at some point!

OP - meat/chicken/halloumi skewers with veg under the grill or on the BBQ are great. And can be served with new potatoes or couscous salad of some sort.

Hot smoked salmon flaked into a rice packet with whatever dressing/additions you like could be nice.

this is where I always share Mark Bittman's comprehensive summer recipe list!

Well it is asparagus season here, so asparagus:
raw in salad
steamed with new potatoes
soup
mousse
just any way you like
You could do asparagus and salmon quiche, too
Where are you?
