Leftover roast lamb and Easter eggs

Pretty much reached the limit of how much chocolate I will let my DC eat but I will
hold some back for filtering out over the next few weeks. My family have gone slightly overboard and I hate the huge boxes cluttering up the place. Was thinking I would smash into shards for freezable chocolate chip cookie dough? Anyone any better ideas?

Also DH inexplicably bought a nearly 3kg lamb leg and there’s over half left because we had a ham too. What are you doing with yours?

I strip the lamb, wrap it in foil and reheat on a low heat, and serve with minted new potatoes, tabbouleh, tzatziki, salad and flatbreads, and pretend I’m in Greece.

Make chocolate brownies? Most recipes use a lot of chocolate.

Lamb ragu then use it for moussaka.

Melt the choc and dip in strawberries

Leftover lamb sprinkled with za’atar served with flatbreads, tzatziki, pomegranate seeds, red onion, cucumber and tomatoes is the absolute best. If there not quite enough lamb for everyone I do some halloumi as well

Use the chocolate for baking. This nyc cookie recipe freezes well. At the step to freeze for 30 min I just leave them in and whenever I fancy a cookie I bake to order.

Jamie O had a nice looking recipe on his Insta feed using up left over lamb. Think he rolled it up in filo into little cigars and then baked them.

I was boring and just shredded the lamb, mixed it with a fresh batch of gravy and served in sandwiches for lunch yesterday, I wish I’d done one of these instead! (It was an epic sandwich though I must say).

Just saying that any leftover mint sauce with baba ganoush and lamb in a pitta was lovely.

I love lamb dinner so I freeze leftover slices in gravy in one portion size so I can have some whenever I fancy it without the long prep!

I’m going to make a lamb curry with a jar of paste, let it simmer for ages with fresh ginger, peppers and tomatoes. I’ve got a bit of the gravy stock left so that can go in as well. Serving with basmati rice, naan and some homemade raita to use up the fresh mint I have left over.

Give some eggs to the food bank

I make the leftover lamb into a kind of pie, using chickpeas or beans, tinned tomatoes and the gravy left over. I add paprika and cumin and garlic powder.
Chop the lamb up small and then cook in a pot for about an hour with the beans and tomatoes etc, then add to a dish and top with mash or sweet potato mash.
And cook in oven medium heat for about 30 mins or until the top looks nice and crispy and the mix is bubbling.
