Ideas for using up carrots

We have a mountain of carrots (DH and I both bought a bag and our neighbours gave us another bag as going on holiday).

I could cook and freeze some; will make a carrot cake to take to friends tomorrow; and will make some soup. But have more than enough for that. What are your favourite recipes to help use them up in a different way? Coleslaw is an obvious choice, as is grating carrot into a salad. Any other innovative ideas? Thank you

Love this as a side to a roast. Particularly roast beef.

Onions, red lentils, carotts, tinned tomatoes, cook until all soft and puree.its a great sauce for chicken or over pasta. It freezes really well too.

In seriousness, carrot and coriander soup and freeze. What about juicing them for a healthy drink or making carrot cake, or see if a food bank will take them

I boil them with some parsnips (approx equal amount) and a bay leaf until really soft. Then drain, add lots of butter and salt and mash. Don’t even mash til smooth - the texture is better if not smooth.

Cut them into batons to eat with hummus and other dips

Make a carrot cake or other baked goods - lots of recipes online

Use them in a salad such as this one

Egg fried rice with carrots, peppers, peas and sweetcorn also a favourite here

Carrot batons as snacks, maybe with hummus

Lentil bolognese (maybe normal bolognese too) make and freeze

Im sure in my meat eating days i used to do beef stew with carrots and potatoes

We get through a lot of carrots in this house

Carrots have a very long shelf life especially when kept in the fridge, so no need to panic about using them up quickly.
Things I make with carrots.....
Carrot rappe, a simple but delicious salad

Carrot raita, good with curry or chilli or anything Middle Eastern

Braised carrots and celery, chop carrots & celery and make a foil parcel, add a knob of butter & a splash of white wine or water. Seal the parcel well and bake for about 45 minutes. This is a good side dish to make with a roast, especially if you're short of oven space, as you can tuck the foil parcel anywhere in the oven. It's timing is not critical either.

Microwave grated carrots with wholegrain mustard.

Potage Crécy

Grated carrot added to Asian style noodle broth

Soffritto, always keep some in the freezer.

To freeze I'd buy a large swede boil/steam and mash with butter and plenty of black pepper
I don't find roasted veg freezer very well.
Carrot cake once sliced does though!

finely chop and use as soffrito/ or grate and sweat with diced tomatoes for a pasta sauce.

Make carrot cake porridge or compote to have with Greek yoghurt and granola

Carrot cake first choice, carrot and coriander soup second. Have also made lovely roasted carrot hummus if that’s your thing.
