Salad bar noodles

Have recently been buying a salad from a local deli for my lunch and they have cold noodles, very fine ones with some kind of sauce or could even be soy sauce. I want re recreate these at home. Does anyone have any idea what type of noodles they might be or the dressing that they are in?TIA

I make salad noodles similar to this recipe - may be nothing like the recipe you're trying to recreate but it's delicious.

Probably rice noodles. They can be flavoured with soy alone or make a little dressing - perhaps add a little rice vinegar or white wine vinegar and a but of sesame oil and honey.
