Looking for inspiration for something different to my regular peas, minty new potato, carrots etc.

OP posts:

Cauliflower cheese ?

Westfacing · 19/04/2025 10:32

Dauphinoise potatoes always goes well... with anything really!

pilates · 19/04/2025 10:34

Roast potatoes, roast parsnips, leeks in cheese sauce, carrots and cabbage.

TheSecondMrsCampbellBlack · 19/04/2025 10:34

I do broccoli with thinly sliced garlic and red chilli or sometimes with a mix of finely chopped garlic, rosemary, chilli and anchovies

Cabbage in Marmite butter is gorgeous (if you like Marmite, obv!) - finely slice white cabbage and cook in a frying pan until charred. Don’t use much oil as you want it slightly crispy. Mix marmite and butter, add right at the end and melt in the pan.

crispy kale is great too although probably better with pork

I also like beetroot and feta salad as a side

Baked kale is a great addition to a Chinese feast – Chinese five-spice and sesame seeds add delicious flavour. Find more Chinese recipes at Tesco Real Food.

I also do carrots, roasted with a dressing of dijon and honey. Roast them, cut thinly lengthways, then pour the dressing over 5 minutes before the end. Dressing is olive oil, white wine vinegar, honey, dijon and lemon juice.

TheSecondMrsCampbellBlack · 19/04/2025 10:38

Also green beans with lemon zest and butter

basically, I’ve managed to make vegetables fattening 😂

ClashCityRocker · 19/04/2025 10:42

We had a roast pork dinner last night, so the Easter lamb has been shoved in the slow cooker with a load of honey, rash-el hanout spice mix and garlic and will be shredded and served with flatbread, salads and pickles tonight.

If you're going roast, spring greens with lots of garlic, salt and lemon go well. I like lots of strong green flavours with lamb.

Didntask · 19/04/2025 11:01

I do dauphinois without the garlic, tenderstem broccoli and courgettes if having a hot dinner. Lots of rocket, coriander and pomegranate salad with feta and cous cous if cold.

AdaColeman · 19/04/2025 11:06

I like green spring vegetables with Easter lamb....
Braised lettuce with peas, I might add pearl onions to this
Romanesco cauliflower
Asparagus (though might have it as a first course)
Greek style diced potatoes roasted with lemon and herbs

maldivemoment · 19/04/2025 11:08

@TheSecondMrsCampbellBlack would you mind sharing quantities for your dressing? Thank you

Spring greens, roasties - with some new potatoes for those of us who can't eat the roast ones. Yorkshire puds because otherwise both my DS would look at me like this.

catin8oot5 · 19/04/2025 11:09

Roast potatos, lemony green beens, carrots, sweet potato mash, cauliflower cheese

RinklyRomaine · 19/04/2025 11:11

We had ours on Wednesday to celebrate a birthday. Slow roasted with garlic, olive oil and lemon plus Greek herbs. Lemon and garlic braised potatoes, coriander toast carrots, loads of greens. Lush.

mumonthehill · 19/04/2025 11:13

Braised fennel with cream and Parmesan is a favourite here. Will also do Yorkshire pudding as everyone loves it!

Snugglemonkey · 19/04/2025 11:31

Mash, roast potatoes, lemon butter asparagus, cauliflower and broccoli cheese, maple roasted carrots and parsnips, butter beans with kale, lemon chilli and garlic (at the request of the vegetarian) Pitta bread and my kebab sauce (at the request of one of my children, who wants some lamb cut off and done with shawrma seasoning) and plain peas. There are only 6 of us, but everyone likes different things!

OMGitsnotgood · 19/04/2025 12:15

I love green beans with roast lamb. Tomorrow I’m also doing Parmesan parsnips, and carrot and swede mash.

Hi, I make it up but a teaspoon of dijon, a massive squeeze from a runny honey bottle a slug of white wine vinegar and a bit more of olive oil. Shake it up in a jam jar and adjust to taste with a squeeze of lemon

Sunshineandgrapefruit · 19/04/2025 13:08

Yorkshire's because they go with anything, rosemary roasties, lemony buttery carrots, slow cooked red cabbage for that sweet sharpness, carrot and swede mashed for comfort food reasons, garlicky greens and minty peas because lamb.....

OMGitsnotgood · 19/04/2025 13:15

Ooh thank you for mentioning red cabbage @Sunshineandgrapefruit, I have some in the freezer left over from Christmas which needs using up.

SauvignonBlanche · 19/04/2025 13:17

I’m doing roast potatoes in beef dripping, Yorkshire puddings, roasted parsnips, mashed carrot & swede, red cabbage and broccoli.

gingercat02 · 19/04/2025 13:25

Nigellas Gigot Boulangére with broccoli and mangetout, followed by Rhubarb Syllabub with the first rhubarb from the garden

canthavethatonethen · 19/04/2025 13:30

We're breaking the habit of a lifetime and not having lamb this year (gasp) but we'd usually have roast potatoes, new potatoes in minted butter, peas, carrots, possibly leeks either sauteed or in cheese sauce, some sort of packet stuffing mix adulterated with herbs and chopped apricots, gravy and - wait for it - Yorkshire puddings. Sometimes we might go mad and have redcurrant jelly, otherwise mint sauce.
