I know that you can put veg in a tomato sauce for pasta and pizza but does it really count as a portion?

Are there any other good receipes?

whether it counts as a portion depends on the amount! But even if it's just a small amount, it all adds up.
I don't have fussy eaters, but grate carrot and courgette into shepherd's pie sometimes just because it's nice.
I have a hand blender and make lots of vegetable soups and fruit smoothies.

You can grate carrots and courgettes in to fruit cakes, beetroot in chocolate fudge cake, lads of finely chopped or pureed veg in to recipes such as spag bol, shepherds pie, or any pie, mashed swede and potato, tin or two of beans and loads of spinach in lasagne, veggie soups pureed, banana used in place or fat/ eggs in cakes, grated apple or mashed banana in porridge, grated veg in burgers, falafels, ect.

Could put cooked carrot or broccoli in hummus befire pureeing.
