Please help settle a family dispute for me! When you're making a fry-up, what fat do you use to fry the eggs, toms, mushrooms etc in - oil, olive oil or butter?

sunflower oil for eggs (olive oil is really too flavoursome to fry eggs in imo but will use it if out of veg oil), butter and loads of garlic for the mushrooms. Toms get roasted with olive oil (I don’t eat them but Dh and DDs love them).

Ghee , i.e. clarified butter that doesn't burn.
Or duck fat if I've got any.

Fry the bacon first in a bit of light olive oil then cook the mushrooms in the rendered bacon fat, tomatoes go in the oven with the sausages, use bacon mushroom pan with a bit more olive oil and some butter for eggs.

Eggs fried in sunflower oil taste horrid.

Clarified butter has a higher smoke point and doesn't burn.

Cold pressed rapeseed oil is my oil of choice as it's nicely buttery:

Tiny drizzle of oil for bacon, cook bacon then set aside to keep warm so eggs can be fried in the bacon fat.

Oil for mushrooms, maybe a knob of butter, always lots of fresh black pepper.

I grill everything except the eggs and mushrooms. Eggs in olive oil, mushrooms with a smidge of butter and cook slowly in their own juices.
