Your best vegetarian Mushroom Pate recipe please!

DW and I were busy in the garden at the weekend. I had been to a wholefood shop and picked up vine leaves, hummus, olives and bread. On my Sparks card I received an offer for £1 off chilled pates. We are both vegetarian so mushroom pate was the option. There were 2 on offer and I decided to choose the £6/£5 with offer pate pictured.
It was delicious and DW loved it so I would like to put together a similar lunch over Easter. I can’t really bring myself to pay £6 again so please can you share your really good recipes?

(I don’t know why I wrote an essay…😳😉☺️.
Basically, I would like some easy to make mushroom pate recipes!)

These are the ingredients

Full Fat Soft Cheese (Milk) · Mushrooms (27%) · Butter (Milk) · Roasted Mushrooms (5%) (Mushrooms · Vegetable Oil (Sunflower/Rapeseed) · Dried Shiitake Mushrooms (4.5%) · Whipping Cream* (Milk*) · Port (3.5%) · Cornflour · Potato Starch · Salt · Concentrated Mushrooms · Sherry Vinegar · Garlic · Thyme · Rapeseed Oil · Cracked Black Pepper · Mushroom Extract · Sugar.

I've quite often wanted to give mushroom paté a go, but I've no idea about the methodology. Does it look blitzed to you, or coarsely pounded?

Ah well my delicious easy mushroom pate does not make a pate as good as that one. Personally I think it's worth the price.

My easy mushroom pate - finely dice chestnut mushrooms and about ¼ as much shallots as there is mushroom. Sauté gently in butter, with fresh thyme, salt and pepper, until soft. Drain off excess liquid and stir in about 10ml dry couscous (this absorbs more moisture) and allow to cool for at least a couple of hours, then stir in full fat Philadelphia.

Bother, link didn't work but go to School Night Vegan. Definitely add the roasted garlic near the end of cooking (I roast whole garlic bulbs when the oven is on for something else and then freeze them)

I always make mushroom pate, roast the mushrooms with herbs, garlic and thyme in the airfryer, any varieties the more the better. Allow it all to cool down then blitz, add cream cheese and a dollop of cream.
